Critically acclaimed Chef Adolfo Garcia’s newest restaurant, a Mano, serves central and
southern Italian cuisine. House-cured salumi, hand-crafted pastas, and long-simmered dishes
highlight the menu in this warm and welcoming trattoria.

a Mano means by hand. The menu is filled with dishes that live up to its name. Ingredients
are carefully sourced from local, sustainable, and artisanal purveyors. With the best
ingredients, Adolfo and Chef-partner Joshua Smith are dedicated to artisanal culinary
technique, and a lot of patience. Centuries-old curing methods like for the Guanciale (with
pork sourced from MS farmer Justin Pitts) shows up in the Buccatini all’Amatriciana, for
example.

Experience the art of Italian dining through a multi-course authentic meal. Or, savor the
pleasures of the Italian table by sampling the array of salumi and nearly dozen tempting
antipasti selections for a lighter supper. Modestly priced dishes at $18 and under encourage
sharing and enjoyment of many exciting flavors.

While salumi is typically featured within antipasti lists, here’s it’s given extra attention. a
Mano’s Salumi aging room is visible to diners, and is stocked with house-made sausages
and cured meats. Try several small plates, or the sampler plate Affetati Misiti, a dream for
any charcuterie lover. Antipasti options range from Supli ai Telefono (Rice croquettes
stuffed with caciocavalla cheese), or the Insalata di Mare (Salad of octopus, shrimp, squid,
celery and potatoes).

Rich, long-simmered flavors are abundantly present in the Coniglio della Casa (Slow-cooked
rabbit with oil-cured olives, roasted garlic & thyme). Exquisitely fresh Gulf seafood
preparations are available nightly. Pre-dessert options include Italian cheeses, some served
with local honey. Traditional Italian desserts include Chocolate and Pistachio Semifreddo,
and Cassata Siciliana.

a Mano also features an accessible Italian wine list. Fresh local ingredients are the basis for
many cocktails, house-made infusions, and for delightful after dinner digestifs… all selected
and served to enhance this new approach to Italian dining in New Orleans.
